Fruit was sourced from southern Margaret River, a cooler part of the region which suits these two aromatic varieties. Viticultural practices, now taken as standard, have evolved over thirty years and to a large extent, this wine is made on the vine. It is a balancing act between leaf to crop ratio and the leaf's exposure to sunlight. The ability to harvest at night is all important.
The blend is 51% Semillon and 49% sauvignon blanc. Winemaking is straightforward but meticulous, with the aim of retaining fresh fruit characters and natural acid balance by minimizing oxidation and maximizing fruit expression. The grapes were night harvested and clear juice underwent cool fermentation in stainless steel by a neutral yeast strain. Just prior to bottling, the wine was lightly fined with milk and isinglass. The lifted nose of fresh grass and passion-fruit pulp leads to a palate showing tight fruit structure. Kiwifruit and green gooseberry flavours make way for some pithy acid that carries an apple-crunch through to a lingering finish. This moreish wine shows plenty of ripe fruit characters from a warmer 2007 Margaret River vintage.
