Tiger Country Tempranillo Petit Verdot Cabernet Sauvignon 2006

TASTING NOTE

Slithering across the nose, this wine has aromas of black olive combined with seasoned prosciutto and an infusion of sarsaparilla. A silky-skinned little wine, the palate is redolent of black brambles and a note of sweet soy. Broody tannins upfront develop into something more supple yet persistent and intriguing in length. Best to tread the grass carefully, this Tiger�s got some savoury bite!

THE SEASON

A mild and wet January pushed us 2 weeks past the average on picking dates. Challenges resulted for both birds and sugar development, and a heavy rainfall after the Easter full moon in April wiped out anything that wasn’t picked. Acids in the whites evolved naturally allowing for great linear structure whilst tannin development in reds was slow requiring great care with extraction. All in all we saw softer wines with brilliant natural acidity.

VINEYARDS

The tempranillo is grown at McLeod Creek on Sebbes Road and the petit verdot and cabernet sauvignon are from Rocky Road. Both these vineyards are located in the southern half of the Margaret River wine region.
Here, the cold Southern Ocean plays an important role for ripening in the cooler part of autumn. At both sites the soils are granite derived gravels of medium to low fertility. All vines are grown on a single bi-lateral cordon with a vertically trained canopy.

VINIFICATION

Fermentation occurs in closed tanks using the 'pumpover' technique, where the juice is passed over the skins during the early and mid phases of fermentation. Skins are separated and pressed when colour is achieved and flavour extraction is completed. The wine is finished and matured in older barrels. The blend is assembled in summer, prior to bottling ahead of the next vintage.
